Ingredients
- 5 tomatoes chopped
- 1 jalapeno pepper finely diced
- 2 Tbsp red onion finely diced
- 1.5 cups frozen corn
- 1 can black beans 14.5 oz
- 1/2 cup cilantro chopped
- 1/2 tsp garlic powder
- 1 tsp salt
- 1 Tbsp olive oil
- 3 Tbsp lime juice
- 8 tortillas hard or soft
- sour cream topping
- grated cheese topping
- lettuce topping
- avocado topping
Instructions

Mix together all the ingredients (except the corn tortillas and toppings of choice) and allow to marinate for several hours.

Place a generous amount of salsa onto tortillas. Add toppings of choice.
