Vegetarian Tacos

Ingredients
  • 5 tomatoes chopped
  • 1 jalapeno pepper finely diced
  • 2 Tbsp red onion finely diced
  • 1.5 cups frozen corn
  • 1 can black beans 14.5 oz
  • 1/2 cup cilantro chopped
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1 Tbsp olive oil
  • 3 Tbsp lime juice
  • 8 tortillas hard or soft
  • sour cream topping
  • grated cheese topping
  • lettuce topping
  • avocado topping
Instructions
  1. Mix together all the ingredients (except the corn tortillas and toppings of choice) and allow to marinate for several hours.

  2. Place a generous amount of salsa onto tortillas. Add toppings of choice.
