Combine all taco seasoning ingredients in a small bowl.
Heat olive oil on med-high. Brown ground beef until most of the moisture has evaporated. Stir in taco seasoning plus 1/2 cup water.
In large serving bowl, combine beef mixture with remaining ingredients (except avocados, salsa, sour cream, and corn chips, which can be served on the side). Delicious, nutritious, colorful, and leftovers can be lightly reheated!
