Tasty Lentil Meatless Meatballs

Ingredients

  • 2 cups dried lentils
  • 1 cup breadcrumbs
  • 1 cup parmesan cheese grated
  • 2 eggs
  • 2 T olive oil
  • 2 onions chopped fine
  • 2 cloves garlic minced
  • 2 tsp oregano
  • 2 T parsley (dried)
  • 4 T tomato paste
  • 2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Rinse lentils and add to large pot. Add water to cover to a depth of an inch. Bring to a boil, and then cover with lid and simmer for 17 minutes.

  2. After lentils are cooked, drain and add to large bowl.

  3. Preheat oven to 400F. Line two baking sheets with parchment paper.

  4. Add all remaining ingredients to the lentil bowl. Mix thoroughly.

  5. Form small (1-inch) balls by rolling with your hands. Place evenly on baking sheets.

  6. Bake for 30 minutes total (switch shelves for baking sheets half way).

  7. Serve with marinara sauce or some kind of dipping sauce. Enjoy!
