Lentil Chili

Lentil Chili
Ingredients
  • 2 T olive oil
  • 1 onion sliced
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1/4 tsp red pepper flakes
  • 2 tsp cumin
  • 1-1/2 tsp paprika
  • 1/2 tsp oregano
  • 2 T tomato paste
  • 2 bay leaves
  • 1 cup dried lentils
  • 1 15 oz can black beans
  • 1 15 oz can kidney beans
  • 1 30 oz can crushed tomatoes
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1 pinch black pepper
  • 2 T balsamic vinegar
  • rice
  • grated cheese
  • cilantro chopped
Instructions
  1. Heat olive oil in a large pot. Add onion, bell pepper, and garlic, and sauté for 5-10 minutes. Add red pepper flakes, cumin, paprika, oregano, tomato paste, and bay leaves, and sauté for another minute.

  2. Stir in lentils, black beans, kidney beans, vegetable broth, crushed tomatoes, salt, and pepper. Bring to a boil. Then lower the heat and simmer for 40 minutes, stirring occasionally. Stir in balsamic vinegar.

  3. Serve over rice, topping the chili with grated cheese and cilantro. Enjoy!
