Brown Rice-Quinoa Pilaf with Walnuts, Apricots, and Currants

Ingredients

  • 1/4 cup parsley chopped
  • 3 Tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 5 Tbsp olive oil
  • 1 large shallot minced
  • 1 garlic clove minced
  • 3/4 cup chopped walnuts toasted
  • 3/4 cup dried apricots chopped
  • 1/3 cup currants
  • 4 packages ready-to-heat quinoa-and-brown rice pilaf with garlic 8.5 oz each

Instructions

  1. Combine first 4 ingredients with 3 Tbsp olive oil.

  2. Saute shallot and garlic in remaining 2 Tbsp olive oil in a large skillet over medium-high heat 3 minutes or until tender and beginning to brown. Stir in walnuts, next 3 ingredients, and lemon juice mixture. Cook, stirring constantly, 2 minutes or until thoroughly heated.
