Ingredients
- 1/4 cup parsley chopped
- 3 Tbsp lemon juice
- 1/2 tsp salt
- 1/2 tsp black pepper
- 5 Tbsp olive oil
- 1 large shallot minced
- 1 garlic clove minced
- 3/4 cup chopped walnuts toasted
- 3/4 cup dried apricots chopped
- 1/3 cup currants
- 4 packages ready-to-heat quinoa-and-brown rice pilaf with garlic 8.5 oz each
Instructions

Combine first 4 ingredients with 3 Tbsp olive oil.

Saute shallot and garlic in remaining 2 Tbsp olive oil in a large skillet over medium-high heat 3 minutes or until tender and beginning to brown. Stir in walnuts, next 3 ingredients, and lemon juice mixture. Cook, stirring constantly, 2 minutes or until thoroughly heated.
